February is the month of love, and what pairs better with love and its celebration, than wine? Not much, to be honest. However, there are a few things that match perfectly with the amazing pair of love and wine: flowers, chocolate, the perfect surrounding, and, of course, the most special company!
When we first started Wine With a View in the summer of 2014, at our flagship location at the Castle of S. Jorge, it had never crossed our minds that it would be just the perfect setting for all kinds of super romantic gestures, such as marriage proposals! Truth is, the wonderful Moorish castle, the breath-taking view with its magical sunsets, and a little wine truck providing the right deliciousness to celebrate love, is pretty much everything you could want for a super special moment!
And there have been quite a lot happy couples, who promised their love to each other, with a glass of Wine With a View!

The reason why so many people fall madly, deeply in love with wine has little to do with tannins or hints of oak or fruits. It’s because of the way it makes us feel— warmly, vibrantly, delightfully buzzed.
This is what we, at Wine With a View believe in. We believe in love and in unique experiences, involving a delicious (Portuguese) wine shared with a wonderful person, sitting back, relaxing and gazing at a breath-taking view to create a magical moment.
What else could you want? Believe it or not, but there is in fact something to top off this truly heavenly scenario! Because, what could be more pleasurable, romantic (and mouthwatering!) than adding a piece of chocolate to the equation!? Just like wine, it is a symbol of passion and that is why also at Wine With a View, they have been a passionate couple!
In this week’s blog post, we will show you how to pair these lovely aphrodisiacs, wine and chocolate, in the best way, along with some other interesting facts!

Both wine and chocolate contain antioxidants, turning them into a not-so-guilty pleasure! Enjoyed in moderation, both of them, apart from being delicious, have many health benefits: boosting the brain, and the mood, helping the control appetite, improving digestion and boosting the immune system, to name only a few.

Pairing wine and chocolate can be tricky as both are very strong in flavor. The general rule is: for the best results, the wine should always be slightly sweeter than the chocolate, as chocolate has tannins, too (called flavanols) meaning that a dry wine paired with chocolate is not a good match, as the distinct types of compounds will create a sour and bitter taste in the mouth. However, since cocoa beans are naturally fruity, chocolate and fruity red wine, (such as the delicious Quinta da Bacalhôa Red or the Tinto da Ânfora) are great together.

Another rule of thumb is to pair wine and chocolate according to their color – lighter wine for white chocolate, heavy reds or fortified wines, such as Port, for bitter sweet dark chocolate. A classic and yummy pairing is the Ruby Port with Dark Chocolate Truffles. Together, they create a new creamy chocolate-raspberry flavor in the mouth. Delicous! Also, the Moscatel Roxo 5 years from Bacalhoa in Setúbal with its intense moscatel aroma, orange flower, citrons, tea and raisins, is great with dark chocolate. This full-bodied wine, with sweet and sour sensations, has a long and persistent finish, making it perfect to combine with a dark and strong piece of chocolate.

With milk chocolate, go for a medium sweet Madeira wine. The Barbeito Boal Reserve, honey colored wine with aromas of dried fruit, floral and yellow fruit jam, is a round medium bodied wine, slightly smoked, with finishing fresh and tangy. It is excellent as a digestive with chocolate, Christmas pudding, crystallized fruits and also cheese.

White chocolate, since it doesn’t contain cacao (and hence no flavanols either), does match with dry red wines! It also goes very well with sweet rosés, such as the florar and intense Serras de Azeitão Rosé, creating a sophisticated sweet taste.

And this one is the most important rule: Just like anything, chocolate and wine pairing are a matter of taste, and the best one is the one you love the most! Keep in mind, moderation is key!

It is an excellent desert wine, particularly with ripe, blue cheeses. It should be served at room temperature.
It has dense, dark chocolate and black fruit aromas with a touch of liquorice and a big, structured and textural palate. Wonderful mouthfeel and long finish.
This Port wine is the perfect finish to any meal. It benefits from being decanted and should be served in a generously proportioned wine glass so that its rich fruity nose can be enjoyed to the full. Excellent with fully flavoured cheeses, especially blue cheeses such as Stilton or Roquefort. It is also delicious with desserts made with chocolate or berry fruits.
It has a rich, fragrant nose with aromas of mellow fruit and hints of honey and oak. Full body, velvety palate and long flavour some finish.
Fonseca Siroco is traditionally served chilled as an aperitif. It can also be drunk - poured over ice in a glass, topped up with tonic and a leaf of fresh mint. Accompanied by salted almonds or olives, it is the perfect aperitif.

Wine With a View was a proud supporter of the Official Portuguese Davos event at 2018’s World Economic Forum in Davos, an annual meeting of global political, cultural and business elites. Wine With a View Davos special edition unbreakable glasses and delicious Bacalhôa wines delighted guests that had a chance to take home some samples as well!
The World Economic Forum (WEF) is a Swiss nonprofit foundation, founded by Professor Klaus Schwab in 1971, and operates with the mission of “improving the state of the world by engaging business, political, academic, and other leaders of society to shape global, regional, and industry agendas".
From the 23rd to the 26th of January, the 48th World Economic Forum Meeting was held in Davos, a mountain resort in the Alps region of Switzerland. This event brings together over 2.500 top business leaders, international political leaders, economists, celebrities and journalists to discuss this year’s topic of “Creating a Shared Future in a Fractured World”.
The Portuguese event was co-organized by a WEF community from Lisbon, the Global Shapers Lisbon Hub, a network of inspiring young people under the age of 30 working together to address local, regional and global challenges. With more than 7,000 members, the Global Shapers Community spans 376 city-based hubs in 156 countries. The Global Shapers Lisbon Hub support many impact projects and its members campaign for a fairer and more equal society.

The Aliança caves were founded in 1927 and bought by the Bacalhoa vineyard in 2007. Francisco Antunes is the prize-winning enologist from the Aliança Caves, where our unique sparkling wine is produced. The Aliança bruto is exclusively made out of the Baga grape, the most traditional grape from the Bairrada region. It is fruity, complex and persistent, with a balanced acidity.

]]>To celebrate the 870th anniversary of the conquest of Wine With a View’s flagship location, the Saint George’s Castle, the Swiss watch company Tissot launched an exclusively Portuguese special edition.

In 1147 Dom Afonso Henriques conquered Lisbon and the iconic castle in the noble area of the medieval city from the Moors, who constructed it in the 11th century. In 1910 the fortification was declared a National Monument.

To commemorate D. Afonso Henriques’ accomplishment, 870 years later, 870 individually numbered, waterproof steel watches were produced by Tissot. Each one of them has the monument engraved on the back of the watch case, and its name written on the sapphire glass watch face.

On the 24th of November, Wine With a View hosted the presentation of this beautiful limited edition watch, at the Saint George’s castle (of course). 60 Wine With a View glasses were personalized with the castle’s name and the brand’s logo, and filled up for the guests with either a red PWQ from the Dão region, a Fonseca Tawny Port or the famous Muscatel from Setúbal.

As stated on their site, “The WiM Association is the international association, founded by wine sector associations and leading wine companies, that centrally coordinates the Wine in Moderation Programme and expands its reach and impact throughout the world”, and Wine With a View believes strongly in their premise: “Wine, only appreciated in moderation”.
After the festive season, which is for most of us a period of excesses, it is time to get back to a healthier lifestyle, which is only compatible with responsible and moderate consumption patterns of wine. It should be appreciated and enjoyed for its flavor, and not consumed in abusive ways that can be damaging.
Wine is a big part of many cultures and traditions, we drink it with a nice dinner with our loved ones and at whatever celebration it cannot be missed. We like it because of its taste and its values, but in order to enjoy its qualities and healthy properties, it is crucial to promote and adopt a responsible and moderate consumption.
Therefore, Wine With a View is proud to be part of this wine value chain, which “brings an invaluable social, cultural, agricultural, environmental and economic contribution to regions and countries”, contributing in the fight against alcohol-related harm.
We love wine, and everyday there are new studies confirming its benefits.
